このコーヒーは、ウガンダを代表するコーヒー加工・輸出業者のひとつであるUgacofとSucafinaによるコラボレーションロットで、ウガンダのコーヒー品質をさらに高めることを目的に作られました。

Bunyangabuは、Beyond Flagship Projectsの一環でもあります。このプロジェクトでは、再生型農業や収入源の多様化を通じて農家の家族を支援し、長期的により安定した農園づくりをサポートしています。

また、農家の方々に配慮しながら、品質の深みと安定性を引き出すために、特別に調整された乳酸発酵プロセスが用いられています。

乳酸発酵とは？？

乳酸発酵とは酸素を抑えた管理された環境の中で、コーヒーチェリーに自然に存在するバクテリアが糖分を乳酸へと変化させるプロセスです。その結果、より甘さがあり、透明感と骨格のある、個性的な味わいのコーヒーに仕上がります。
